Three Dukes of Burgundy – The Good, The Bold and The Fearless

We all got very excited a few months ago when oak barrels from Burgundy arrived at the brewery. We knew that we had to brew something extra special to age in these barrels. And so we did. The Three Dukes of Burgundy is our 2016 Barrel Aged Project. All of these limited edition beers will be bottled into 750ml amber champagne-style bottles. See that bottle there on the right? We got so excited when the labels arrived yesterday that we just had to try them on a bottle! No beer in it yet, but that’s coming. Two of these three winter beers will be released by the end of the month; the barleywine will see the light of day in January 2017. As they’re released into your local independent off licences we’ll tweet / Instagram /Facebook about them using the collective hash tag #DukesofBurgundy. Three Dukes of Burgundy – The Good, The Bold and The Fearless The Golden Age of Burgundy was from 1364 to 1477, when the Dulchy was recognised as one of the major powers of medieval Europe. John the Fearless was known for defending the emerging Burgundian state but all his scheming couldn’t save him from an axe in his back. Under Philip the Good, there was pomp and ceremony aplenty – along with mistresses and illegitimate children – as he manipulated his strategic alliances into independence for the Dulchy. A lover of luxury, Charles the Bold drained the coffers and when he was killed at the siege of Nancy in 1477 it was the beginning of the end for what had been the wealthiest state in Europe. Limited Edition: September 2016: No Way Gose

No way? No Way Gose! We’ve gone a bit sour at Eight Degrees this autumn, brewing up a blood orange and Irish Atlantic Sea Salt gose. Soured with lactobacillicus, a huge coriander seed charge was added to the kettle and we finished the brew with flakes of natural sea salt, harvested from the Irish Atlantic by the O’Neill family on the Beara peninsula down in West Cork. Our gose tastes of tart oranges with a beautiful citrus and floral coriander aroma, finishing on a slight saline note that draws you back in again. Short description: Gose-style – tart and aromatic – salty lips Style: Gose Hops: Hersbrucker Malt: pilsner malt, malted wheat Strength: 4.1% ABV Bitterness: 7 IBUs Tasting notes Colour/appearance: rich, opaque amber. Aroma: bright orange and aromatic spice notes. Flavour: tangy blood orange with a touch of sourness from the lactobacillicus and a lovely sea salt brininess. Crisp with a memorable twang, this beer has a sour-plus-salt profile that draws you back again and again. Aftertaste: lick-your-lips salt with a tart kick. Food pairings: when we asked head brewer Mike for a food pairing for this beer, he came up with one word: tequila. We’d like to add a few more words: eggs benedict, Silver Darlings’ pickled herrings alongside a classic potato salad, pho bo, a selection of fresh shucked Irish oysters. Limited Edition – Supernova DIPA

A double IPA with double dry hopping of Simcoe, Amarillo and Enigma, this beer is an explosion of flavour. Expect a big hop aroma of pine, grapefruit rind, tangerine and peaches with a good assertive bitterness, followed by a dry finish that leaves your palate demanding more. Like a supernova, this beer might just be your brightest shining moment of the night. Although we genuinely hope not… Short description: Double IPA – explosive hop flavour – full on bitterness Style: Double IPA Hops: Simcoe, Amarillo and Enigma and Equinox Malt: two row base Irish malt Strength: 8% ABV Bitterness: 85 IBUs Tasting notes Colour/appearance: light orange with a fluffy off-white head Aroma: oodles of passionfruit and tangerine. Flavour: a full mouth feel with glorious full-on hoppy bitterness. Lots of fruit in each sip including passsionfruit, tangerine and underripe papaya. There’s a solid malt backbone here, holding everything in balance. Aftertaste: humming lingering bitterness. A contemplative drink. Food pairings: put this Supernova with some seared scallops, especially if they come with a pineapple / mango / chilli salsa and feel your tastebuds go stratospheric. August 2016: Limited Edition – Amarillo Single Hop IPA

Smooth on the outside, crunchy on the inside…oh, those were armadillos. Amarillo, on the other hand, is the fourth in our single hop trilogy. OK, so we’re easily confused, not great at numbers – but we do make tasty beer. The Amarillo hop, unlike the armadillo, is famous for its high levels of myrcene. What does that mean? It’s all the good stuff: a flavour profile rammed full of grapefruit, melon, apricot and peach…with not a crunch in sight. Short description: single hop IPA – soft bitterness – summer sipper Style: single hop IPA Hops: Amarillo Malt: two row base Irish malt Strength: 5.7% ABV Bitterness: 62 IBUs Tasting notes Colour/appearance: orange with a foamy white head. Aroma: bright citrus pith and apricot. Flavour: this beer is tangarine-tastic! It’s got full-on intense fruit flavours, oodles of stone fruit and a touch of melon. Aftertaste: a lingering humming bitterness. Food pairings Summertime and the living is easy. Pull together a platter of cured meats – choose from some fantastic Irish suppliers like McCarthy’s Butchers in Kanturk, Gubbeen Smokehouse and James McGeough in Oughterard – with Irish farmhouse cheese: Hegarty’s cheddar and Cashel Blue work well with this kind of citrusy IPA. Add a few slices of crusty sourdough, a handful of gherkins, a little pot of rhubarb chutney and a couple of bottles of Amarillo Single Hop IPA and you have the perfect summer evening feast. August 2016: Limited Edition – Going Out Out, Kölsch-Style

You know when that happens? You’re not going out out, you’re just going out for a pint of milk and then you meet yer man, and he’s off to catch up with the lads in the local and, sure, herself is coming by in a while and…suddenly it’s 2am, you’re standing by the bar in Whelans, you realise that you’re still wearing your slippers – and you’ve lost that pint of milk. You were undoubtedly out out. A particularly good out out beer, Kölsch is an ale which is is cold fermented with its own special yeast and then cold conditioned for an extended period – just like a lager. At Eight Degrees we love this elegant, nuanced and extremely clean tasting beer style, which is perfectly suited to being brewed with our Galtee mountain water. The malt bill is made up of the finest German Pilsner malt, hopped to perfection with the Noble hop Saaz. Short description: Kölsch-style – crisp bitterness – sessionable Style: Kölsch-style Hops: Saaz. Malt: Pilsner malt. Strength: 4.5% ABV Bitterness: 36 IBUs Tasting notes Colour/appearance: straw yellow with a white fluffy head. Aroma: gentle floral to light fruit aroma. Three summer single hop specials. Three of our favourite hops; one grist bill to unite them all! The malt body for these brews is simple, yet elegant, designed to showcase the hop flavours and aromas. The third beer in our single hop summer trilogy is Galaxy. This versatile hop from far, far away – well, Australia actually – has a wonderful blend of fruity characteristics: a clean citrus aroma gives way to ripe passionfruit and peach flavours. Pair with smoky, savoury barbecued spare ribs or a big, fat, juicy burger. Perfect for those clear starry, starry night skies! Short description: single hop IPA – short, sharp and snappy – tropical fruit Style: single hop IPA Hops: Galaxy. Malt: two row base Irish malt. Limited edition – Summer Days Seisiún IPA

Raise a glass to these long, long summer days when our side of the world tilts towards the sun for a while. What better way to escape the work day drudgery than with our 2016 summer session IPA. Pop the top, tilt your head back, close your eyes and drink in the gentle fresh breeze; these hops will be your guide to summer days drifting away and, uh oh, those summer nights… Summer Days Seisiún IPA brewed with Amarillo, Mandarina Bavaria, Equinox and Citra hops – have yourself a blast! Short description: session IPA – soft bitterness – summer sipper Style: session IPA Hops: Amarillo, Mandarina Bavaria, Equinox and Citra, dry hopped with Simcoe. May 2016: Limited edition – Mandarina Bavaria Single Hop IPA

The second release of our three summer single hop specials. Three of our favourite hops; one grist bill to unite them all! The malt body for these brews is simple, yet elegant, designed to showcase the hop flavours and aromas. This IPA features Mandarina Bavaria, the new hop on the block from Germany. It’s a tangerine dream with intense pineapple and lemon zest flavours and a herbal finish, imparting a wonderful summery aroma. We have adopted an innovative hop utilisation technique to maximise aroma pickup and ensure that this beer is bursting with hop flavour. Fantastisch! Short description: single hop IPA – heady aroma – sweet citrus Style: IPA Hop: Mandarina Bavaria Malt: two row base Irish malt Strength: 5.7% ABV Bitterness: 47 IBUs Tasting notes Colour/appearance: orange with a foamy white head. Premium range – Citra Single Hop IPA

Citra, with its fruity, juicy aroma and flavour, is one of our favourite hops. To showcase it, we’ve used a simple, yet elegant, malt body which puts Citra’s fabulous tropical flavours on display: think ripe lychee, passionfruit and guava. Sweet and tart, with a gloriously juicy mouthfeel. Short description: single hop IPA – juicy – citrus bite Style: single hop IPA Hop: Citra – what else! Malt: two row base Irish malt Strength: 5.7% ABV Bitterness: 62 IBUs Tasting notes Colour/appearance: pale orange colour, fluffy white head. Aroma: full-on tropical fruit juice. The sweet top note is undercut with bitter aroma. Flavour: those tropical fruits come through all the way in this luscious and full bodied beer. Enough malt backbone to let the passion fruit and guava flavours shine, balanced with strong, persistant orange pith bitterness. Both sweet and tart, with a gloriously juicy mouthfeel. Aftertaste: full on bitterness with a decent citrus bite. Food pairings: the bitterness will cut beautifully through sweet low-and-slow pulled pork served with spiced peach relish. This beer also will counterbalance the bold flavours of barbecued chicken wings and play nicely with some grilled spicy fresh Gubbeen chorizo sausages. March 2016 – Limited Edition: Nailed It IPA

Celebrating five years of naturally adventurous brewing! We launched at Cork’s Easter Beerfest back in 2011. Now, five years on and having brewed more than 40 unique beers, we want to show you what we have learned. It’s no secret our favourite beer style are IPAs; think black, white, red, session and imperial. With this brew we have combined all our knowledge and experimentation to come up with an IPA that we think hits the nail on the head. Old and New World hops combine to create waves of hop flavour and aroma. Expect pine, tangerine, passion fruit, lime and pear flavours, all combined with our classic single Irish malt backbone. Short description: IPA – up front passion fruit– dry finish Style: IPA Malt: Premium Irish Pale Malt, Vienna, Munich, Cara Amber. Hops: Simcoe, Vic Secret, Centennial, Apollo and El Dorado. IBUs: 71 ABV 5.8% Tasting notes Colour/appearance: light pale yellow. Aroma: full on pine aroma with some passion fruit on the nose. Flavour: rich passion fruit flavours tempered by pine bitterness and a super spicy tingle. This beer is brewed to be dry as a bone, leaving you hanging for the next sip. Aftertaste: refined pine bitterness in the aftertaste. Doesn’t linger. Food pairings: This is the beer for your Easter lamb curry. Limited Edition: The Double Irish Imperial IPA

We have taken our award-winning The Full Irish IPA and amped up the hops to create her bigger and bolder brother, the Double Irish. Using 100% premium Irish malted barley, this elegant unadorned malt profile allows us to showcase all that’s great about New World hops. Expect a tropical fruit explosion with plenty of residual pine hop flavours. Big, bold – and naturally adventurous. Short description: Imperial IPA – big and bold – New World hops Style: Imperial IPA Hops: Pacific Jade, Cascade, Citra, Galaxy, Ella Malt: Two-Row Malted Irish Barley ABV: 9.0% IBUs: 93 IBUs Tasting notes Colour/appearance: warm rich orange colour. Aroma: leading from the start with mango, followed by orange and pine undertones. Flavour: Think The Full Irish, dialed up to 11. Lots of luscious tropical fruit, especially that deep mango flavour, nicely balanced with pine and orange pith. Lots of spicy tingle to temper the full-bodied richness. Aftertaste: a delicious bitter pine finish. Food pairings: There’s nothing meek or retiring about this beer; something to keep in mind when figuring out what to pair it with! Full-bodied and luscious, this is what we want to drink with a spatchcocked tandori chicken, served with a mango/pineapple/chilli/mint salsa, or a spicy Asian pork salad (don’t hold back on the chilli). The sweet mango flavours also work with carrot and pineapple cake and it’s well worth trying with a slab of sticky, fresh ginger gingerbread. Reviews: Lots of grapefruit and orange marmalade make up the guts of it, with darker mandarin and tangerine stuff hiding in the folds of the sweet fruit, along with mango, a hint of pine and just a smidgen of Starbursts. Winter 2015: Limited edition – Mór Barleywine

Mór. And Mór and Mór. This is a giant of a beer. With more caramel malt, more hops and more alcohol. Barleywine may be an old English style but this is a very EDB take on the classic, using copious amounts of American hops. Golden brown in the glass, with a thick white head, the gloriously big, bold flavours of Mór are based on a huge malt body. With masses of dried fruit flavours – particularly apricot – to the fore, there’s a spicy flourish of warming alcohol to finish. It’s a glass of Mór. Short description: barleywine – sweet, boozy, fruity – drink with care! Style: Barleywine Hops: Centennial, Cascade. Malt: Two-Row Malted Barley, Caramel and Crystal Malt ABV: 10.2% IBUs: 91 IBUs Tasting notes Colour/appearance: golden brown with a nice white head. Aroma: sweet boozy fruit and caramel on the nose. Flavour: aged in our conditioning tanks since the end of the summer, this is a well-balanced, big, bold beer. Lively and fruity, with sweet caramel notes, there are masses of dried fruits here, with a particular concentration of intensely flavoured dried apricot. Aftertaste: this will give you a seriously warm glow, with a lingering spicy alcohol finish. Food pairings: It’s worth pouring this into a snifter glass and savouring slowly by itself but, if you insist on matching it with food, grab a box of those soft Medjool dates and complement the caramel flavours. Traditionally, blue cheese makes a great contrast, but you need something particularly strong and pungent, like the raw milk Bellingham Blue.
