Coming in cans this week, it’s our Seisíun IPA! It’s a crisp and refreshing beer with lots of aromatic hops, all packed into a sessionable 4.5% ABV. From the label: Woven deep into the fabric of Irish society and tradition is the seisiún, an informal coming together of people in a pub – over a beer – to play music, tell stories and enjoy each other’s company. Limited Edition: Warrior Irish Red Ale

Warrior Irish Red Ale was brewed specially for our 2017 Fanah-Fest. The festival is named after St Fanahan, a warrior monk who is the patron saint of Mitchelstown, which is our brewery hometown. Every warrior monk needs a traditional Irish red ale, especially on his feast day. Our Warrior Irish Red Ale is not too heavy in terms of ABV but it’s strong to bursting with hops. There’s a decent malty base to balance out the pine and grapefruit Cascade hop flavour. Short description: Toffee, Pine, Citrus Style: Irish Red Ale Malt: Irish pale malt, Cara, Munich Hops: Nugget, Cascade Strength: 4.7% ABV Bitterness: 69 IBUs Tasting notes Colour/appearance: an orange-red colour in the glass with a tan head. Aroma: sweet vanilla toffee and a strong grapefruit citrus aroma. Flavour: solid toffee malt base with bitter notes of pine and grapefruit. Pinot Noir Barrel Aged Stout infused with cacao husks

If there’s one thing we love more than rolling out our barrels, it’s collaborating with local producers. For this beer, a stout that we aged in pinot noir barrels, we got in contact with our local bean-to-bar chocolatiers Wilkie’s Chocolate. Based just down the road in Midleton, East Cork, Shauna Wilkie set up production in 2012 and has been focusing on making small batch bars from carefully sourced, single origin organic Peruvian Criollo cocoa beans. Much though we love Wilkie’s chocolate, this time we focused on the leftovers, taking cacao husks (that went on quite a journey from Midleton to Mitchelstown – thanks to Becca, Triona and Jimmy for their help in delivering!)  and adding them to the stout for secondary conditioning in the barrels. The result is limited to draught only and got its first outing at last weekend’s ABV Fest – that’s my glass of it there – in Belfast. The rest will be pouring from this Thursday at the Irish Craft Beer Festival in Dublin’s RDS. Don’t miss it! Short description: Dried fruit, cacao, vanilla. Style: barrel aged stout Hops: Nugget, along with lashings of cacao husks from Wilkie’s Chocolate. Malt: pale ale malt, CaraMunich, chocolate malt, roasted barley, wheat malt and dark crystal. Strength: 5% ABV Bitterness: 45 IBUs Tasting notes Colour/appearance: dark and handsome in the glass, with a tan head. Aroma: dark roasted malt, espresso. Flavour: Dried fruit with a restrained cacao undercurrent and delicate oaky vanillins coming through. Light enough in body to be pint-able Aftertaste: satisfying roasty dryness in the aftertaste. Food pairings At Eight Degrees, we do love stout with – and in! – brownies. If you’re not going to make your own, we’d recommend Camerino Bakery‘s peanut butter brownies for an ideal pairing. The Double Irish DIPA

The Double Irish is back. The bigger, bolder brother of our much loved, multi-award winning The Full Irish Single Malt IPA has returned – with an extra hint of mischievousness thrown in. Using 100% premium Irish malted barley, this elegant unadorned malt profile allows us to showcase all that’s great about New World hops. With Enigma and Mosaic joining Citra and Amarillo, this really is a showcase for these heavy hitting hops. Expect a tropical fruit explosion with plenty of residual pine hop flavours. Big, bold – and naturally adventurous. (Still goes really well with a Dutch sandwich.) Short description: Heavy hitting hops of the New World. Style: Double IPA Hops: Citra, Amarillo, Mosaic, Enigma Malt: Irish pale ale malt, Irish lager malt ABV: 8.8%. All the eights! IBUs: 98 IBUs Tasting notes Colour/appearance: warm golden colour with a white head. Aroma: a full-on juicy hop aroma with fruity cantaloupe melon to the fore and a substantial resinous backbone. Flavour: luscious balanced bitterness. Flavours of dried mango and bitter orange marmalade with a solid pine resin bitterness. Aftertaste: full bodied with a delicious zesty finish. Food pairings Like the last brew, there’s nothing meek or retiring about this beer; something to keep in mind when figuring out what to pair it with! Full-bodied and luscious, we’re going to stick with spatchcocked tandoori chicken, served with a mango / pineapple / chilli / mint salsa, or a spicy Asian pork salad (don’t hold back on the chilli). The sweet mango flavours also work with carrot and pineapple cake and it’s well worth trying with a slab of sticky, fresh ginger gingerbread. Summer 2017: Berliner Weisse with Redcurrant & Rhubarb

This summer we have created something special: a mixed grain, mixed fermentation Berliner Weisse. A grain base of 50% malted barley and 50% wheat plus a mixed culture fermentation creates a sweet and sour treat steeped in Germanic tradition. The ale yeast combines with lacto bacteria to work side by side in symbiotic harmony to bitter the beer. Add some ripe redcurrant sweetness and rhubarb – just like the brewery lads’ favourite mammy treat, the humble rhubarb tart – and you have yourself free love in a glass. THE thirst quenching, summertime beer from Eight Degrees. Short description: Infused with redcurrant and rhubarb. Style: Berliner Weisse Hops: Saaz, plus redcurrants and rhubarb Malt: Irish lager malt, malted wheat. Strength: 3.1% ABV – yes, you read that correctly. NOT 31% as someone wondered recently. Bitterness: 7 IBUs Tasting notes Colour/appearance: A glorious, sparkling pink! (To make the boys wink.) Aroma: Sour and sharp with redcurrant fruit. Flavour: Bright and zippy sweet-sharp flavours, with redcurrant predominating. It’s a fruity Dib Dab sherbet. Aftertaste: super refreshing with a dry lactic tang in the finish. Food pairings Summertime beer! With such a low ABV and palate-cleansing tart flavours, this is a beer to quaff while the sun shines and you eat your way through a barbeque’s worth of bold, sweet / savoury / smoky flavours. Limited Edition: April 2017 – The Good Barleywine – Three Dukes of Burgundy

The Golden Age of Burgundy was from 1364 to 1477, when the Dulchy was recognised as one of the major powers of medieval Europe. John the Fearless was known for defending the emerging Burgundian state but all his scheming couldn’t save him from an axe in his back. Under Philip the Good, there was pomp and ceremony aplenty – along with mistresses and illegitimate children – as he manipulated his strategic alliances into independence for the Dulchy. A lover of luxury, Charles the Bold had drained the coffers by the time he was killed at the siege of Nancy in 1477 thus ending what had been the wealthiest state in Europe. We have brewed three beers to celebrate these colourful medieval dukes, aged in oak barrels from their French homeland. The Fearless – Farmhouse Ale, aged in Burgundy chardonnay oak barrels. (released November 2016) The Bold – Imperial Stout, aged in Burgundy pinot noir oak barrels. (released November 2016) And now – finally! The Good – Barleywine, aged in Burgundy pinot noir oak barrels. Like Duke Philip the Good of Burgundy, there was much pomp and ceremony when we chose to age our barleywine in red wine barrels from his native land. We dried out the barleywine a touch more this time round, adding a three-hour boil to the brew to intensify the flavours and add a touch of caramelisation to the wort. This beer can be best described as a Caribbean Christmas cake with lots of ginger, spice and orange. Short description: Barleywine – spicy vanilla oak – share and savour Style: Barleywine Hops: Nugget, Simco, Centenial. Malt: two-row Irish malt, Crystal, CaraAroma. ABV: 10.9% IBUs: 88 Tasting notes Colour/appearance: dark amber in the glass with a pale caramel head. Aroma: swirl and inhale the big boozy. rum and raisin
