#8 Black Ball Metric Stout aged in Jameson whiskey barrels 11.2% ABV We decided, with what’s happening on either side of the pond, to steer clear of imperialistic notions, old school vernacular and just go metric. We rammed the mash tun as full as we could with an excess of dark complex malts, added extra char for a slightly sinister twist and then aged everything in Jameson whiskey barrels from our friends in Midleton. The culmination of our RACK ‘EM UP Series, this is a big bold stout. There’s a touch of sweet vanilla in there from the oak and lots of cocoa and dark chocolate to combine with smooth, spicy whiskey notes. Deep, dark, rich and rewarding, celebrate sinking a Black Ball this winter. Style: Metric stout aged in Jameson whiskey barrels. Malt: Irish pale ale malt, chocolate malt, roast barley, wheat, CaraAroma. Hops: Nugget. ABV: 11.2 IBUs: 44 Tasting notes Colour/appearance: deepest darkest black in the glass with a light coffee head. Aroma: Chocolate. Fruity. Black cherry. Sweet vanilla. Irish cream. And that’s before you’ve even taken a sip… Flavour: a deliciously full bodied sipper, sweet and smooth on the palate at first, with spicy whiskey heat at the end. It gradually opens up in the glass as it warms – this is a beer to drink at slightly more than 8 degrees  – to reveal lots of creamy sweet vanilla along with fruity berries, particularly cherries and blackcurrants. You’ll want to get to the front of the cue for this one. Aftertaste: a little char bitterness. Food Pairings This is a beer to hold for the end of the meal. RACK ‘EM UP Series: #7 Maroon Ball Kveik Double IPA with WHC Lab

Eight Degrees is turning eight this year. To celebrate eight years of brewing, we are producing eight exciting and innov8ing beers throughout 2019, many of them collaborations with the world’s best craft breweries or with quality local producers. These eight unique beers will form part of our exciting and colourful RACK EM’ UP Series. Eight Years. Eight Beers. Eight Collabs. For our #7 we wanted to do a big, modern double IPA, and there’s nothing bigger or more modern than a double IPA with Kveik. This is the cool, new-kid-on-the-block Norwegian yeast strain – that’s only just been around for hundreds of years, passed down from generation to generation in that country. It’s a quick fermenting, flocculent yeast, with a high alcohol and heat tolerance which produces citrus notes with a distinctive guava and lime zest character. As part of our commitment to quality at Eight Degrees, we’ve been working with Philip Woodnut from WHC Lab in Wicklow. He’s been developing a new strain of Kveik called Valkyrie from an isolate that comes from Norway’s Ebbegarden region. It’s a tropical fruit-forward ale with lots of tutti frutti flavours, which we’ve further accentuated by dry hopping with the dynamic Enigma. Kveik it out. Style: Double IPA brewed with kveik Malt: Irish pale ale malt, slight touch of Cara Pils. Hops: Cascade, Mandarina Bavaria, Enigma. ABV: 8.3 IBUs: 12 Tasting notes Colour/appearance: pale orange with lightly laced head. Aroma: unripe stone fruits, pineapple lumps, green apple. Flavour: a rich full-bodied mouthfeel with sweet berries and lots of tropical fruit, particularly nectarine,  pineapple and passionfruit. It tastes like a particularly luscious tropical juice. RACK ‘EM UP Series: #6 Green Ball Belgian-style IPA with Siphon Brewing

These eight unique beers will form part of our exciting and colourful RACK EM’ UP Series. Eight Years. Eight Beers. Eight Collabs. RACK ‘EM UP Series: #6 Green Ball Belgian-style IPA 6.5% ABV We first met Breandán Kearney of Siphon Brewing at Belfast’s ABV Fest, although our beer paths had crossed previously. A Belgium-based, Warrenpoint-bred beer writer, he also helms the experimental Siphon, which Ratebeer named Belgium’s best new brewery for 2017. At Eight Degrees we are known for our hoppy IPAs; when we wanted to brew a Belgian-style IPA, we turned to the man with yeast expertise. On Breandán’s advice, we used a strain of one of his favourite Belgian-style ale yeasts and he travelled to Mitchelstown to oversee the brew. Starting from a classic Pilsner malt base, we have Vic Secret and Equinox bringing stone fruit and tropical flavours, with a New World Super Noble hop flourish from Loral. But this beer is all about the yeast: with a lemony, orangey ester profile, flavours of citrus, lemongrass and white pepper predominate. It’s bold, complex and sophisticated – just like our brewers. Style: Belgian-style IPA Malt: Pilsner malt base with a hint of Caramunich, Athgarrett oats and wheat. Hops: Vic Secret, Equinox, Loral. ABV: 6.5 IBUs: 43 Tasting notes Colour/appearance: bright gold and briskly carbonated with a rocky head. Aroma: full on fruit at first, with everything else coming in behind: lots of floral, spicy and mint herbal notes.
